BBQ Sauce

This is your starting point, I guarantee you will never buy a jar of that sweet sickly stuff from a supermarket ever again.

Experiment with the ratios, if you like it sweeter, use more sugar, more tarte, use more vinegar, bring in more spice flavours such as Thyme, oregano, chillies, paprika, fresh tomatoes.

Brown the onions, but do not burn them or let them crisp, then add in the garlic and chipotle paste and allow the flavours to blend and the garlic to soften.

Add in the passata and carrot/apple juice juice and bring to a gentle rolling boil.

Add the sugar, cider vinegar, ketchup, mustard and if you want a bit of heat, add some chillies.

Blend with a stick blender if you want a smoother sauce, then sieve it if you want it really smooth.

Simmer and reduce by half so the sauce becomes nice and thick. To make it glossy, add 25g of butter while the sauce is still hot and stir in.

Season to taste and add the lime juice.

25ml Frenchs American Yellow Mustard

1pinch Sea salt to taste
