Set your grill to roasting temperature, so 175-225 degrees C and create an indirect zone.
Chicken thighs are best as they retain moisture, they tend not to dry out and they have a much nicer meatier flavour than chicken breast meat.
If you are using breast meat, flatten it first so it is all the same thickness and will cook evenly.
Use a BBQ spice rub or blend. Its easy to make one and just requires a bit of imagination. Check our recipe out here.
Cook the thighs indirect for 15-20 minutes until cooked.
Take a piece of chicken and brush with BBQ sauce. Check out our recipe here. Return to the heat, but this time using the direct part of the grill. When nicely browned, crispy and sticky move them back to the indirect zone..
Add some small bits of hardwood to create some smoke and shut the lid for 10 mins.
Serve with your favourite sides and maybe a garnish of thinly sliced red onion and red chillies.
