Pork Basic Marinade
super easy
This is enough for about 2kg of meat.
100g light muscovado sugar
25g paprika
25g good salt
1 Tbsp ground black and white pepper
1 Tsp Finely chopped Thyme (fresh if you can get it or dried if you cant)
1 Garlic clove, crushed
Juice of 1 lemon
2 Tbsp olive oil
2 Tbsp Cider Vinegar
Chilli powder to taste.
Mix all the ingredients in a jam jar, put the lid on and give it a good shake.
Ideal with pork shoulder, pork belly
Pat dry the meat you are going to marinade.
Apply the marinade liberally, cover and place in the fridge for at least 8 hrs to allow flavour to develop.
