Wild Garlic Base

250g of Garlic leaves washed and patted dry with a clean tea towel. This might look like a lot but it reduces down dramatically.
Blend in a food processor and add in 75ml Olive oil, 1 tsp salt, juice of half a lemon and a twist of pepper.
What you should have is a fairly thick paste that is a vibrant green. Transfer to a clean sterile jar.
It will keep in the fridge for several weeks.
- Use this to add to mayonnaise, bast new potatoes in, cover roast potatoes in, dip bread in, add to hummus.
- Drizzle over meat as seasoning or a marinade.
- Drizzle over meats prior to serving to add a splash of colour and fresh flavour.
If you want it to taste more of garlic, then use more garlic, if you want ot more runny, then use more oil.
Also add in other fresh herbs and flavours such as Rosemary, Fresh Mint, vinegars, chillies
