Shaky Patricia Vs Shaky Pete

This drink is based on the famous Hawksmoor drink, the Shaky Pete. As legend has it , the original was created when their BarKeeper went off to an event at Hays Wharf in London that used to be a warehouse for things like Lemons and Ginger in our days of Empire. We have substituted the Ale for Fizz, this can be sparkling wine, Prosecco or even Champagne.

You could go with the original Shaky Pete and revert back to the 100ml of Ale, they recommend London Pride but any good Ale works just as well as long as it is not a strongly fruity ale like Mango. Citrus IPA works really well.

We don’t recommend Pete and Patricia ever meet though.

50 ml  of freshly squeezed lemon juice

35 ml of  Good Gin, not your flavoured stuff,

100 ml  Sparkling wine, Champagne

For the Ginger Syrup:

150g  of fresh root ginger, peeled and sliced thinly, do not be tempted to grate it

350g of Caster Sugar

250 ml of  Water

Method

In a saucepan bring all of the ingredients for the syrup to the boil. Remove from the heat and allow to cool then strain, bottle and refrigerate.

In a blender blitz 50ml of the ginger syrup, lemon juice, gin and half a cup of cubed ice for 10 seconds.

Strain through a coarse sieve into a frozen beer mug, so that a few ice chips slip through into the drink.

Top with the Fizz and drink straight from the glass.
